While many motivations exist for going vegan, health and animal welfare chief among them, studies have shown that there is a large economic component as well. It may not be the main reason, but the reality is that many consumers are benefiting financially by switching to a plant-based diet.
Food prices have skyrocketed in the past few years driven by a sharp 8% increase in the meat, egg, and dairy sectors, according to Financial Times. Prices of vegetables, on the other hand, have either remained constant or are decreasing in some cases.
The economic impact of plant-based eating could be massive, if only a portion of the US population made the switch. Compelling figures from The Atlantic show that the US could save upwards of $180 billion if we ate according to governmental dietary guidelines, and upwards of $250 billion if we avoided animal products altogether.
